Other than certain iron objects around the church, the humans individually have nothing to defend themselves against demons. Frollo however, who have known of demons for as long as he can remember, made a wise decision in storing weaponry. He does not have much, and he will have to decide carefully who he gives what to.

Waterbottle: Not only for drinking, waterbottles can be kept to store holy water. Holy water is water blessed by a priest and can only be obtained by Frollo, or in the font guarded by the demons. Holy water will burn like acid on demon skin.
Iron knife/ bullets: Iron is a great way to hurt a demon, it's one of their great weaknesses. Specialmade iron knives were made specifically to hurt demons as much as they possibly could. A great way to fight them off. They are however rare, and Frollo therefore never got the chance to get his hands on many of them.
Bags of salt: Salt is another demon weakness. No demon, except from white-eyed demons, can step over a line of salt. However, even high ranked white eyed demons will feel the pain if salt touches their skin.
Exorcism spell: Demons can not be killed easily, and very few weapons in the world can kill. These weapons are not known by many, not even by Frollo and is rumored about, but for most is only concidered a myth. However, demons can be exorcised and sent back to the pits of hell when loudly reading a latin exorcism spell whilst the demon is in a devil trap.
Anti-possession charm: Although demons can not possibly possess a human inside of a cathedral, or on any holy ground, this is not known to Frollo or any of the humans. It is also unknown to them, that the demons can not escape their bodies. Therefore, anti-possession charms are handed out to keep the humans from being possessed.
Devil trap: Devil traps are drawn on the ceiling or floor and once a demon has stepped inside of it, he can not get out before the circle of the devil trap is broken. The symbol holds great power over them, and not even the most powerful demons can escape it. However, demon traps must be drawn in blood.
